With our last MODA get-together of 2016 and we wanted to end it off with a bang so we asked Chef Poyan Danesh, residing chef at Miele Vancouver to create something spectacular for us and he did not disappoint! Chef Poyan is one of Canada’s top award-winning chefs having competed on Team Canada and gaining numerous accolades for his savory and perfectly crafted dishes, it was no wonder this meal was probably one of the best I’ve ever had! We started the evening off by sharing all of the great opportunities in 2016 that we’ve had to grow MODA into the wonderful and supportive community it is today.

Chef Danesh started us off with marinated OceanWise organic mussels with a basil foam, then savored an amazing OceanWise Albacore Tuna Tataki, baby arugula and kale salad, pickled red onions with a citrus dressing. We then moved onto two of my favourites, Tandoori Chicken with a fenugreek and cardamom cream sauce and then truffled gnocchi, rose sauce with seared scallops with garlic butter lobster. I must have had about 5 servings…they were AMAZING!! We even got to flame-broil our very own crème brûlée!

An Interview with Cindy Liu from Premier Love

Get caught up with Cindy Liu of Premier Love as she shares a few keys she discovered on her journey in the video world of weddings.

M: Why did you start your business?

C: I have always been passionate about photography and cinematography, as a medium of expression. I never had a specific dream job in mind but I knew I always wanted to work in the creative field so I could to share my work with the world.

My background has always involved some form of media. As a film major graduate and former show host of a local radio station, I was continuing to improve on a variety of communication skills that would help me create engaging content that appeals to a wider audience. It’s important to create content that the masses can connect to.

Every wedding is a different project and I get to work with different people all the time. Doing that helps widen my horizons and keeps me excited to learn something new, every time.

M: What has been the best thing you’ve learned so far?

C: I feel it’s extremely important to connect to your clients. Weddings are a very personal occasion so I go to great lengths to ensure my clients feel comfortable. I especially feel that an individual salesperson may a not click with every client, every time. If you feel you may not be able to work well with someone, it’s better that you don’t take their business. From my experience, it’s more frustrating dealing with the clients you don’t click with. To further yourself, I think it’s important to understand why you couldn’t make a connection with that client and try to isolate the reasons so you can improve upon them for next time. Don’t be afraid to get out of your comfort zone and sell yourself. You’ll click with the right people.

M: Where does your inspiration come from?

C: My inspiration comes from all of the amazing professionals around me. Watching other entrepreneurs give 110% effort every time inspires me to also work hard and give my best.

M: How do you get motivated if you find yourself creatively stuck?

C: I watch dog videos on Youtube, just kidding! I get inspired with other people’s work, seeing something new, trying something different. It’s easy to fall into a cycle of doing what’s comfortable but with social media, I can get exposed to a wide variety of other artists every day.

“Although my time with Tonya and Ian was relatively short, it was very enjoyable! Their wedding was so uniquely special. It truly was the joining of two families. It definitely was a more intimate one with their families and really close friends.

Right from the time I arrived at the Fairmont Pacific Rim to photograph the details and getting-ready portion on the ladies’ side to the releasing of the lanterns in the evening on the yacht, it was a truly special wedding.

Their “first-look” was a new experience for me! Ian and the boys had taken their boat from West Vancouver to meet Tonya at the dock at Harbour Green Park in Coal Harbour. Now that’s arriving in style! Ian was smitten all over again when he arrived and saw Tonya in her wedding gown for the first time.

After a the family and wedding portrait session, everyone headed over to Tavola restaurant for a private dinner. Shortly after, we headed over The Wedding Yacht (Sunset Bay Cruises) to get ready for their gorgeous ceremony on the roof of the yacht. We were delighted to see a familiar face in Marilyn Knipp who officiated the ceremony. Interestingly enough, CTV was filming a special on weddings and following Marilyn around that day! So with filming alongside our friends at FIll in the Blank Studios and the CTV crew, there wasn’t a shortage of cameras at this wedding!

The boat had set sail and the ceremony went off without a hitch, now it was time for a little mingling and cocktails for the bridal party and the guests. As the sun set, the formal part of the reception begun. There were fantastic speeches from both Tonya’s and Ian’s kids, close friends and siblings… a touch part of the evening as the big day started to come to a close. The traditional first dance was on the roof deck of the yacht which was now transformed into a dance floor. And as mentioned earlier, the night ended with Tonya and Ian lighting several lanterns in dedication to loved ones that could not be there that night with them.

An amazing day and a great throwback wedding post that we can share with you today. Enjoy some of our favs from Tonya and Ian’s big day.”

Get caught up with Donna Wadsworth of Savoury City catering as she shares a few keys she discovered on her journey in the culinary world of weddings.

M: Why did you start your business?

D: I love great food! It makes me crazy when it’s good, crazy good! Catering is such a ride and each client presents something different. To pull a client’s vision together, with sometimes outrageous logistics, coupled with great food that has been cooked out in a field, a barn or out of a garage, well, that’s just the best!

M: What did you want to be when you grew up:

D: I always thought an Archaeologist or a Veterinarian. I had every animal under the sun, and then some! I had an Easy Bake Oven from an early age, and well, that did it!

M: What has been a favourite highlight in your career?

D: Being asked by one of our clients to cater and personally attend to His Holiness, the 14th Dalai Lama. This was an exclusive group of 30 of Vancouver’s top business people gathering to meet and have an intimate conversation with His Holiness at a private home. It was an absolutely spine tingling experience, and when he arrived to the home, the air was electric. That room was filled with so much sheer joy and laughter and it was hard to contain. Truly a highlight and something I’ll always cherish.

M: What was your favourite wedding you’ve done?

D: My all-time favourite wedding was Christene and Philip. They were (and still are!) so crazy wild in love with each other, it was insane. You have to love that kind of crazy love. They were very clear on what they wanted from the get-go.

They assembled a killer team, and it was a little stressful at times, trying to pull it all off with a tight timeline for setup but we all made it happen and it was magical! There are always a ton of little things that go on behind the scenes that the client won’t see, things we have to deal with that can get you distracted but it was as close to flawless as you could get. It was filled with love and laughter!

M: How do you keep the creativity flowing:

D: Cookbooks of course – I have a mountain of them! I have Old Gourmet magazines that go back years. I have each and every issue of SAVEUR magazine. A few of my very favourite cookbook authors are Alice Waters, Suzanne Goin, Nancy Silverton and Ottolenghi. Another favourite is Jamie Oliver because he tells such a brilliant story with his food. I also find inspiration browsing Donna Hay, Jean-Georges and Thomas Keller. Interior Design magazines are another inspiration as they take me to places where I dream. While looking at those interiors, I often get new ideas. If  I’m creatively stuck I go somewhere to clear my head. Somewhere calm and peaceful, or somewhere that will inspire me. It could be to one of the Gulf Islands, or somewhere far and away. I also go to the movies, listen to live music or go somewhere totally different then my usual stops. I love going somewhere that takes me outside of myself and gives me some breathing room.

M: What has been the best thing you’ve learned over the years?

D: Get a mentor. I’ve had 2 over the last 10 years, and they’ve helped me enormously. None of us have all the answers, but their advise, wise counsel and enthusiasm have been invaluable in helping me run my business.

Science World Wedding by Vivid Moments

Science World has been around for more than 25 years and is more than just the iconic dome full of interactive and educational exhibits and programming. Our recent expansion has resulted in the creation of our Green Roof terrace. Fast becoming one of Vancouver’s more popular venues for weddings and other memorable events, the terrace overlooks the tranquil waters of False Creek and is framed by Vancouver’s prestigious skyline. The Green Roof is home to a manicured green space with flowers, shrubs and trees that add that touch of nature to complement the breathtaking view. Although a very popular event location on its own, the Green Roof is just one of many spaces enjoyed here at Science World at TELUS World of Science.

“Our fall season started off with none other than Ben and Dana’s gorgeous wedding was celebrated at the wonderful Science World! We’ve heard many great things about this award winning venue and were glad to finally capture a real wedding there. Surrounded by an incredible view of False Creek and the romance of the sunset and city lights, it was the perfect background for this fun and energetic couple. We’ve found after all the weddings we’ve documented that if the bride and groom are cheerful and having a great time, so will everyone else . This was definitely the case for Ben and Dana as their guests bombarded them with laughter, applause, and high fives all throughout the night. So many wonderful moments were captured at this wedding, and the journey for these two is only just beginning.

Get caught up with Maria Schollen of Niche Events as she shares a few keys she discovered on her journey in the décor world of weddings.

M: Why did you start your business?

MS: I am an entrepreneur by nature. I started my first business in college designing swimwear and fitness-wear . The company never took off but I was always destined to work for myself. After several careers, I went back to school for event planning and met a wonderful mentor whom I worked with for over 5 years. I quickly learned that the not-for-profit industry was not the right fit for me. Although, meaningful, it didn’t always pay the bills. While working, I discovered that I had a flair for design and floral so I decided to start my business in the fall of 2011.

M: What did you want to be when you grew up?

MS: I actually wanted to be a fashion designer. I went to school for 4 years at Kwantlen College and graduated with a diploma in fashion arts and marketing. I have a very European style, classic and timeless. That style also appeals to a very broad market in the wedding industry.

M: What is the best thing you learned over the years?

MS: My company finally opened it’s very first studio in November 2015.  It was one of the happiest moments in my business life. You need a great support team.  I have been very lucky to have my husband support me through all of my crazy business ventures. My parents were always there for me and for the last three years, my assistant, Jeanine Wilk, has been my rock. One of the most profound things I’ve learned, though sometimes the hard way, was that if you try to compete on price you will be out of business very soon. 

M: Where does your inspiration come from?

MS: Wow, everywhere!  There is so much inspiration out there. I love anything to do with history or with Europe.  I design a lot around the flowers that I love. If you get stuck creatively, start at the beginning and examine what you’re trying to design. Work on one problem at a time.  It usually works itself out.

“They got ready together that morning at the club, there were two dresses– a blush sequin gown with a cowl back and a green silk Chinese dress like her mother wore when she married. The Vancouver Club is always a great spot for portraits but we did a quick run into Stanley Park for some West Coast nature, too. The ceremony was in the University room; I dimmed the lights a bit — kept just a bit of life in them but we wanted to feel the light from the window and the candles too. So many happy unscripted moments made my day.”

Paper Flower Wall

Paper Flower Wall with Amari Yu, Making Memories

Amari Yu and Debbie Siu from Making Memories are masters of the paper flower wall. They have been making these giant beauties for over three years now and they are always a huge conversation piece at weddings and events. Little do people know how many hours are spent making these floral perfections. Amari gives us a little insight into the process, what a beautiful statement piece for any event:

“It takes time!!  A lot of people aren’t aware of how much time it is to tackling this project..in general, the large flowers (20”) take about 1 hour each to construct from scratch

You need the right thickness of paper to construct these flowers and it’s costly.  You don’t want to use computer paper or else the flower won’t hold its shape and it can get damaged easily.  We use 80+lb card-stock and each flower (of course depends on the size) needs 10-20 sheets of paper.

When making these, a hot glue gun is your best friend.  The industrial glue guns are the best.  Don’t use the dollar store types as the glue might not get hot enough to give a really good bond and your flower petals may fall apart.

To make these, the first step is to create the base, cut the card-stock into your petal shapes, then work from the outside in, sticking down each petal at a time.  Don’t get too caught up with how the petals look, the more asymmetrical each petal is, the more realistic and unique your flower will turn out. You will discover different variations just by changing the petal shape, the number of paper sheets and how densely you place your petals.

To transport these creations you make sure you have a large car!  Seems obvious but some people overlook this detail. Ours is a free standing 8 x 8 wall so you need the space to transport something that large. Our wall is cut into four 4 x 4 panels for easy assembly.”

“Brandy & Steven chose the beautiful Marriott Hotel in Vancouver to say their “I Do’s”. As the rain began to sprinkle the terrace with rain drops this couple said their “I do’s” this past August. Following the ceremony we took a stroll through Coal Harbor for some more photos.

Their elegant day was planned by the amazing Laura and her team at Epic Events. The ballroom was decorated ever beautifully with pink, grey, and cream colors. I absolutely loved their custom cake topper. The head table had a hedge of beautiful flowers set on pretty silver sequined head table cloth. The 4 things clients want more than anything else. Over the next few weeks, we’ll be revealing the 4 secrets to gaining and maintaining happy clients. It’s essential to the health of any business to leave a trail of happy clients. Without it, there’s no genuine, exuberant promotion from your clients and in this day and age, it’s vital.

#2 – Attention to Detail

The small bow on the wrapping, the lovely hand-written card, the special wine from where they first got engaged, all the little things that give the finishing touches and let clients know they are important to you. Attention to detail, small or big, has been one of the most powerful ways to positively influenced clients. Especially at wedding time, when everything is examined and noticed, what better way to show the people who have entrusted you with part of their big day that they can feel confident in their choice, knowing that you heard them, you understood them but most of all, that you took the time to show them you care.

Key: Every interaction with your client, whether in-person or over the phone, should be filled with your truly heart-felt attention. Taking note of little clues and mentions of personal likes and dislikes and then applying them to your client service will definitely not go unnoticed and will without a doubt, reinforce their confidence in their vendor choice and build you up even higher in their opinion.

Attention to detail is one of the biggest wins you can do for your client, even if they don’t mention it to you, they will certainly mention it to others.
