Savoury City Catering with Donna Wadsworth: An Interview

Get caught up with Donna Wadsworth of Savoury City catering as she shares a few keys she discovered on her journey in the culinary world of weddings.

M: Why did you start your business?

D: I love great food! It makes me crazy when it’s good, crazy good! Catering is such a ride and each client presents something different. To pull a client’s vision together, with sometimes outrageous logistics, coupled with great food that has been cooked out in a field, a barn or out of a garage, well, that’s just the best!

M: What did you want to be when you grew up:

D: I always thought an Archaeologist or a Veterinarian. I had every animal under the sun, and then some! I had an Easy Bake Oven from an early age, and well, that did it!

M: What has been a favourite highlight in your career?

D: Being asked by one of our clients to cater and personally attend to His Holiness, the 14th Dalai Lama. This was an exclusive group of 30 of Vancouver’s top business people gathering to meet and have an intimate conversation with His Holiness at a private home. It was an absolutely spine tingling experience, and when he arrived to the home, the air was electric. That room was filled with so much sheer joy and laughter and it was hard to contain. Truly a highlight and something I’ll always cherish.

M: What was your favourite wedding you’ve done?

D: My all-time favourite wedding was Christene and Philip. They were (and still are!) so crazy wild in love with each other, it was insane. You have to love that kind of crazy love. They were very clear on what they wanted from the get-go.

They assembled a killer team, and it was a little stressful at times, trying to pull it all off with a tight timeline for setup but we all made it happen and it was magical! There are always a ton of little things that go on behind the scenes that the client won’t see, things we have to deal with that can get you distracted but it was as close to flawless as you could get. It was filled with love and laughter!

M: How do you keep the creativity flowing:

D: Cookbooks of course – I have a mountain of them! I have Old Gourmet magazines that go back years. I have each and every issue of SAVEUR magazine. A few of my very favourite cookbook authors are Alice Waters, Suzanne Goin, Nancy Silverton and Ottolenghi. Another favourite is Jamie Oliver because he tells such a brilliant story with his food. I also find inspiration browsing Donna Hay, Jean-Georges and Thomas Keller. Interior Design magazines are another inspiration as they take me to places where I dream. While looking at those interiors, I often get new ideas. If  I’m creatively stuck I go somewhere to clear my head. Somewhere calm and peaceful, or somewhere that will inspire me. It could be to one of the Gulf Islands, or somewhere far and away. I also go to the movies, listen to live music or go somewhere totally different then my usual stops. I love going somewhere that takes me outside of myself and gives me some breathing room.

M: What has been the best thing you’ve learned over the years?

D: Get a mentor. I’ve had 2 over the last 10 years, and they’ve helped me enormously. None of us have all the answers, but their advise, wise counsel and enthusiasm have been invaluable in helping me run my business.
